Yes. And believe it or not, I've advised several people (who later became nSiteful clients) to do just that. But what I've discovered is that people needing something more than a simple blog encounter challenges they are generally not equipped to hurdle very easily when working with the WordPress.com system.
In addition, the themes available at WordPress.com are limited in ways that themes available for use in dedicated WordPress-based sites are not.

How much can I learn in just a few hours of training?
A lot. The GoToMeeting Web collaboration tool we use is better than being in the same room. And we're definitely members of the teach you how to fish school of thought. Our goal is to make you as self-sufficient as possible while still being on call to help you when you need the help.

As an extremely frugal person myself, I appreciate your need to build something that is top-notch without having to invest a lot of money. If your needs or wants grow to include functionality beyond the scope of the base plan, you have the option of hiring nSiteful (or someone else) or doing it yourself.
